Lion. Marinate in a blend of herbs,onion, white wine for a day. Dry off with kitchen paper and flash fry. I will also suggest an amarula sauce as a good accompaniment. Delish!

I've been watching Come Dine with Me during the summer and the meat few people were serving was zebra meat and crocodile meat. The guests didn't seem to mind but if anyone offered me such meat, I'll puke all over.
I rather stick to the usual meat found in the meat shops.

I love salmon and eat it about once a week. I usually bake it with a lemon dill and caper sauce. I'm not a huge fan of maple syrup either, but it REALLY goes with salmon. When you add the soy sauce, garlic and ginger, you just get the faintest hint of the maple syrup, but it's still sticky, sweet and spicy. It's one of the best things I've ever tasted. Everyone raves over it, and I've shared the recipe a lot.

Pork chop bake with gravy, served over 'smashed' potatoes....delish! 2-4 ..Thick, lean, pork chops ( I like bone in...it gives the meat a better flavor) 5-6 crushed garlic cloves, 1 chopped onion, 4-8 oz. sliced mushrooms, low-fat cream of mushroom soup, sour cream, approx. 1/4 cup cooking wine (any kind would probably work..I used red) some milk to thin gravy... season chops with seasoning salt and pepper I heated enough ghee and garlic oil to quickly brown chops in a large frying pan. Preheated oven to 400 and placed chops in a large baking dish with lid. Then I (poured out most of the oil remaining, if too much to saute) and added garlic, onion, mushrooms and cooked until crisp-tender...added wine, let 'deglaze' and boil for a minute, or so, then add soup and milk to get a consistency of semi-thick/thin...placed gravy over chops, covered,and baked for around 45-50 minutes. Then I stirred in enough sour cream to my 'taste' and thicken... Served this over 'smashed' potatoes and cooked spinach with butter...Yummy! ;D This is husband 'approved.'

Janieshere that sounds delish!!! I can't seem to eat pork though, it upsets my tummy for some reason.
I eat a lot of venison and I have a million ways to cook it up. I'm a big fan of garlic, especially in smashed potatoes. Your gravy would be good over some moose cutlets. yummy.

I like peppercorn sauce/gravy as well...with tenderloin! yummmm
Peppercorn Sauce
1 1/2 cups marsala wine (375 ml) 1 cup chicken broth (250 ml) 1 clove garlic, crushed 10 peppercorns, multicolored, crushed (I use more) 1 1/2 cups whipping cream (375 ml) 1/2 teaspoon dijon mustard (5 ml) Coarse salt and pepper, to taste
Add wine, broth, peppercorns and garlic to the tenderloin roasting pan and cook for 20 minutes or until the liquids are reduced to half. Add cream and mustard and, stirring frequently, cook for 20 minutes or until liquid is reduced by half again. Season to taste and allow to cook for 1 more minute. Remove from heat and spoon sauce over tenderloin.
