Another bucket of green beans from the garden today. Time to freeze another batch! Still anxiously waiting for the tomatoes to turn already. squash caught "cucumber mosiac virus" and had to be pulled up. Hubby will plant new squash next weekend. That's a shame, we had to do that with our first batch of beets...plants were GC bought, so I sowed my own seeds, this batch are doing ok...Our Toms are just beginning to turn now...can't wait to be enjoying our own...and the carrots we pulled yesterday were delicious...x

About to have a really busy day. More green beans. I had a 10 gallon bucket of green beans I put up for freezing yesterday. Got 9 freezer bags of beans. Will be doing breaded okra for frying & freezing it today. Along with more green beans. Going to pickle some jalapenos. Make another round of ice box pickles to use up the cucumbers I have. Squash is gone. And the tomatoes are starting to come in. Now to just get them thru a couple of days of ripening inside and then I'll be making hot sauce to can. My life as an 1800's housewife....LOL

Wow steff! What a lot of work! I didn't even plant any veggies this summer, just a few herbs. I babied my tomatoes the last two summers, only to find them all on the ground, still green and with one bite out of them. I don't mind sharing, but these critters can be most inconsiderate.

Fresh veggies are a lot of work but oh so worth it. I miss having my garden.

I ended up with a gallon freezer bag full of green beans (that will going to mom) & a gallon freezer bag full of breaded okra for frying (that also will be going to mom's). Both of those will hold her over rest of the summer. And I have LOTS more of both coming in. I made a test run on pickled jalapenos today. Just for the fridge to see if hubby likes them. If he does, then I'll do full batches & process the jars & can them. That should work better than freezing them like I did last summer. They lasted, but get too mushy once thawed out.
In the next couple of days, I'll have enough romas to make my first run of hot sauce to can. The first batch will be passed out to family & friends for criticisms & the next run will go to the little store that wants to sell them.
I didn't get everything finished & my kitchen totally clean until about an hour ago. It's been a LONG day! I'm sure I"ll wake up tomorrow to my sinks filled again after hubby does his early morning picking & then it'll be another LONG day. LOL But I'm having fun & saving money!

Hi Steff and everyone, my word you've been busy, and what a bumper crop...So nice to have all that space to grow.. I'm growing okra for the first time this year, unfortunatly our Summer is slow to get going, we're pulling gorgeous sweet Carrots, New Potatoes, and Tomatoes and Cucumbers are doing great....also Strawberries..... I usually make a spicey green Tomatoe Chutney with some of my Toms, usually the ones that are left still green toward the end of the season, really yummy... Could you post your recipe for the Hot Sauce, I would love to give it a try....thanks... Hope you've got enough Freezer space for all your produce, well done, can't beat Home Grown...

Here is the recipe I work off of for the salsa.
www.pickyourown.org/salsa.htm
Also if you get enough okra, I have a recipe for breading it and freezing it for fried okra all year. It is a very time consuming recipe tho. Not hard work, just lots of time in and out of the freezer between steps. Helps cut down on the sliminess of okra.

How much ground are you growing Crops on...seems sizeable...and then do you grow Pumpkin etc, going on to the Winter veg... We are just growing in the space we have in our garden now, though at our last place there was a half acre at the back ideal for all types of Fruit & Veg...miss that, but can't manage that size plot anymore... Hope our Okra work out this year, just a trial this season but if successful will do more...I think I have a recipe for breaded Okra too, I'll have a look through the recipes....
