Fried Okra
Ingredients Serves: 4 10 pods okra, sliced in bite-size pieces 1 egg, beaten 150g (5 oz) polenta 1/4 teaspoon salt 1/4 teaspoon freshly ground black pepper 100ml (4 fl oz) vegetable oil
Preparation Prep: 15 mins | Cook: 15 mins 1.In a small bowl, soak okra in egg for 5 to 10 minutes. In a medium bowl, combine polenta, salt and pepper. 2.Heat oil in a large frying pan over medium-high heat. Dredge okra in the polenta mixture, coating evenly. Carefully place okra in hot oil; stir continuously. Reduce heat to medium when okra first starts to brown, and cook until golden. Drain on kitchen roll.
Hi Steff, here's one for fried Okra...I thought I had a recipe...smaller amounts, but handy to go with other things...

Here's a pic of the garden early on. We sit on a full acre of land, but size wise, I have no clue the dimensions of the garden.
My okra recipe is for breading it and freezing it. I usually get 3 or 4 gallon freezer bags stuffed full of breaded okra that we use all year long.

Just finished shucking 23 ears of corn picked this morning. Going to make my gramma's creamed corn for the freezer. Called her and got the "recipe" IE: cut it off cob, milk cob, season, put into baggie & freeze....LOL

Your Freezer must be huge lol ;D we have a large chest freezer but with all that produce, we would run out of room quick...
The Okra recipe above is a good one for small portions cooked fresh, I doubt that we'll get a huge amount this year, we'll see...
So the corn is just stripped from the cob, and frozen till required...no cooking involved at all...
That plot looks a good size for growing....good luck to you...

36 ears of corn today, another 5 gallon bucket of green beans & a 10 gallon bucket of roma tomatoes. Picked our 2nd watermelon and it was DELICIOUS!
Mom & gramma came over today to "help". Gramma snapped green beans, mom shucked corn. I sent a gallon freezer bag of green beans home with them & 3 bags of creamed corn, along with 2 jars of salsa & 1/2 a watermelon.
Once I'm done with the rest of the corn & have it bagged up in the freezer, then I'm onto salsa. I should get another 12 1/2 pint jars of salsa today.
I'm tired just thinking about it all....lol

;D Sounds like it Weltschmerz, also called Ladies fingers, as that's the shape they take, before cutting up...Not everyones taste, I like them...they're nice added to different dishes, or coated and fried in pieces, or breaded like Steff does them, but I doubt we'll have enough this first year for Steffs recipe...we're just trying them out for the first time...

Yesterday I took 10 jars of salsa up to the corner store guy that wanted to sell it for me. When I went by today, he had already sold 5 jars at $4 a jar!

I'm so excited by it, I could just burst! I had given him a jar to try and he was raving about it, but asked that I make it hotter....lol I won't be making spaghetti sauce with the next batch of tomatoes, but more SALSA!
