Well, i have been busy. Made homemade beef barley soup the other day. Yesterday i baked a ham and made scalloped potatos. Today, not sure what is on the menu. I have to go freezer surf to see what is in there.

I need to defrost and clean a freezer so it's gonna' be vegetable soups for a few days. I'll probably add quinoa or beans or hull-less barley or whole wheat pasta, maybe a little ham.

Do you make your own dough? I love my Kitchen Aid Mixer. It makes the best pizza dough. And, i like making stromboli's too.

My dad (Sicilian) used to make sauce from Roma tomatoes. Went something like this: Chopped and sauteed onion in 1 part butter/2 parts olive oil, diced tomatoes, tomato paste, garlic, Parmesan cheese, anchovy paste, marjoram, basil, salt, pepper, Bay leaf, Chianti, sugar. Sometimes he'd replace the spices with Good Seasons dry Italian dressing mix, simmer for 30 to 60 min. and thicken with a beaten egg. Dried red pepper flakes on the side. The amount of each ingredient varied on how many tomatoes he had either from his garden or the produce stand he worked.

My kids requested Tuna Noodle Casserole. 2 cans cream of mushroom soup, 1 cup milk, cooked noodles, 3 cans of tuna (i only eat albacore) and some mixed veggies. Top with breadcrumbs and bake. Pretty easy.

I'm defrosting a turkey, just for the hell of it. There's no reason to only have it on special occasions. I love turkey. Friends and family will eat what we can, and the carcass is destined for a hearty turkey soup. I think my son prefers the soup to the turkey itself. I make it with lots of garlic, dill and parsnips.

I'm defrosting a turkey, just for the hell of it. There's no reason to only have it on special occasions. I love turkey. Friends and family will eat what we can, and the carcass is destined for a hearty turkey soup. I think my son prefers the soup to the turkey itself. I make it with lots of garlic, dill and parsnips. I often get a large turkey breast in the meat section. Bake it and make some mashed and stuffing. It is actually a pretty cheap and easy meal.

I'm not a big fan of white meat, so sometimes I'll just buy some turkey drumsticks.. A whole turkey is big enough to share, have leftovers for the critters and to make soup.

BTW, what are some of your go to dishes? What are some of your fave dishes you like to make? I need some fresh ideas. What is an easy dish to make in advance and eat later? Some dishes don't keep that well. And, with a busy bball schedule, we are all eating at different times.

Soups, stews and chili, all various types. Big batches then put in canning jars and frozen. A canning jar can go right into the microwave from the freezer. But I have only myself to please.
