Pumpkin and aubergine masala
This vegetable curry uses a ready-made curry paste to save time and has yogurt stirred in at the end to enrich it and cool the heat of the spices.
2tbsp sunflower oil 1 large onion, peeled and thinly sliced 450g/1lb pumpkin, cut into 2.5cm/1in chunks 1 small aubergine, cut into 2.5cm/1in chunks. Soak in salt water for a few minutes, 2 courgettes, sliced 1 red pepper, deseeded and chopped 2tbsp medium curry paste 400g/14oz tin of chopped tomatoes 2tbsp less salt soy sauce, such as Kikkoman 300ml/½ pt vegetable stock 2tsp cornflour 150g/5oz natural yoghurt Chopped fresh coriander, to garnish .Method1.Heat the oil in a large, deep pan, add the onion and fry gently for 5 minutes. Add the pumpkin and cook for a further 5 minutes, stirring occasionally. 2.Add the aubergine and courgettes, frying for 5 minutes more before adding the red pepper. Stir in the curry paste. 3.Add the tomatoes, soy sauce and stock and bring to a simmer. Cover the pan and cook for about 30 minutes or until the vegetables are tender. 4.Mix the cornflour with the yoghurt and stir into the pan. Simmer over a low heat, stirring frequently, until the sauce thickens. Cook for 2-3 minutes more, scatter over the chopped coriander and serve with pilau or plain boiled rice, Indian breads and chutneys.

Easy but good fish cakes
1 jar or canned salmon 2 cups cooked left over potatoes 1 egg 1 medium diced onion salt and pepper to taste 1 cup bread crumbs
mash the left over potatoes, add egg, and the rest of the ingredients. shape into patties, roll in bread crumbs. put enough oil to cover bottom of frying pan. fry patties till nice and golden!! Enjoy..its one of my fave dinners!! serve with a nice salad and you veg of choice!!

geesh, I went to write my caesar dressing recipe and I got booted lol anyhoo: Caesar Salad Dressing: 3/4 cup olive oil 2 eggs 2 garlic cloves juice of 1 lemon 1 teaspoon salt, or 4 anchovies 1 Tablespoon worchestershire sauce 1/2 parmesan cheese Mix all in blender till smooth and thick Refrigerate till use ENJOY!! this is another one of my faves!

oops forgot to mention the croutons..sheesh lol...toss salad and add croutons last so they stay nice and crunchy. ;D

STUFFED SQUASH/ZUCCHINI
2 squash/zucchini cut in half lengthwise, and contents scooped out leaving shell intact (save the contents and chop!) feta cheese chopped mushrooms chopped onions 1 egg Italian style breadcrumbs seasonings such as garlic powder, salt, black pepper shredded cheese (any kind)
Preheat oven to 350
Prepare an oven safe dish that will fit your squash/zucchini with spray vegetable oil
saute squash, onion, and mushrooms until most of the liquid has evaporated.
Allow to cool.
Add the egg, feta cheese and bread crumbs until you have a slightly firm mixture
Fill the squash with mixture.
Place in oven and bake for approx. 45 minutes. Check to see if squash is fork tender.
After cooked enough place shredded cheese over squash and bake until melted .
I don't usually use measurements so this recipe if for ones that are very experienced in cooking, and know how to 'eye-ball the ingredients' ! We love this recipe. Hope you do too!

I was very fortunate my nonna (grandma) made me watch everything she made. I had no choice at the time lol..now I am sooooo happy she did, now I can make gnocchi, polenta, risotto, veal scallopine, chicken marsala..
