I would love the gnocchi recipe!!! My father was just teaching my mother how make them and to roll them with her thumb. She never got the knack of it before Dad passed.
Unfortunately, my Nonna (yes, I know what that is. My gkids call me that) wasn't a sharing person. She begrudged my mother and us because Mom wasn't Italian or Catholic. Italian mothers are fiercely loyal to their sons. ;D

Isnt that crazy!! my dad was straight from Italy, and my mom was from here..a non Italian, she was First Nations, so I am a half breed...my nonna wasnt very nice to my mother either. but she MADE me watch her cook, so I could take over when she passed...I was so lucky, didnt think so at the time lol...gnocchi is very easy..here it is
- 4 medium potatoes, unpeeled about 2 lb. - 1¾ cups flour - 1 egg - 1½ tablespoon salt
1. Place the potatoes in a medium pot with cold water. Bring the water to a boil adding a pinch of salt. Reduce the heat and cook until the potatoes are tender when pierced, then drain.
2. When the potatoes become cool enough, peel them. Using a ricer, squeeze all the potatoes into the flour making a mound. It's important to do this while the potatoes are still warm. Allow the riced potatoes to cool.
4. Roll out the gnocchi dough so that it forms a 1½ inch diameter rope, then cut 1-inch pieces. Take each piece and roll it over a fork (better a wooden grid shaped with corners) so that the grid impressions remains.
5. Take a pot with water and bring to boil, then add the gnocchi. Be careful, avoid cooking the gnocchi at a rolling boil. Don't lift them out until they float.
I hope this is helpful....make your favourite tomatoe sauce ...or a sauce of your choice...enjoy!!
sometimes I make it without egg..its just as nice...

no prob kat...gnocchi & rabbit is my fave, polenta con conillio....I went to Italy 3 years ago, and my whole family, when I visited made me gnocci lol...
Risotto Milanese
2 cups Arborio rice 4 cups chicken broth 1 onion thinly diced 1 tsp. saffron salt to taste 1 cup white wine 1/2 cup parmesan cheese 1 Tablespoon butter 2 Tablespoon olive oil
Put olive oil, and butter in pot, add diced onion, simmer for about 10 mins. Saute the rice in the pan over medium heat for 5 to 7 mins, or until lightly toasted. Stir constantly so the rice will not stick and burn. Stir in one ladel of chicken stock, and keep stirring until it is mostly obsorbed, add more of the broth as well as the white wine in the second manner, until rice is almost al dente. Stir in the saffron, and 1/2 of parmesan cheese. Turn off heat, cover and let sit for 4 to 5 mins.
I hope you enjoy this recipe as much as I do...my nonna made me learn this dish lol..

dont I know it, I have 1 brother and he is the baby of 4 sisters...that little brat could do no wrong lol...I'm the oldest of the brood...and I took all the flack from my nonna, she lived with us for 4 years...and I had to work side by side with her that WHOLE time!! and my brother was a spoiled brat lol....cuz he knew he could....

Hi IG looking forward to your northern Italian cuisine recipes since I cok Italian myself. My favorite is my great grandmothers homemade ravioli. Have to keep it in the family!! I love homemade ravioli, that is one dish I have never had made...share yours pretty please

Penne Arabbiata
1/3 cup olive oil 3 garlic cloves 1 teaspoon red pepper flakes 1 (28 oz) can diced tomatoes 1 bunch fresh parsley chopped 1 teaspoon salt 1 pkg. penne (12 oz)
Cook garlic, salt and red peppers in the 1/3 cup olive oil for a few seconds. Add the diced tomatoes and let simmer for about an hour..stirring ocassionally Cook penne with some oil and salt in the water , drain, and pour sauce and parsely over penne and enjoy sprinkle parmesan cheese on top...have with a nice baguette and salad.

OMG this sounds so good. I have a Penne Alla Vodka that is so easy and so good that I will have to post. This weekend I will be putting these recipes together to share. And yes FS I will post so you will have to purchase a food processor. It takes some time but is well worth the time!!

I used to watch my nonna make the pasta on our counter, she would make a little mountain of flour, make a whole in the middle, add the eggs and liquids, and slowly knead it all in...she made everything from scratch. one of my fave dish is pollo diablo (devil chicken). she would use the cast iron pan, butterfly the chicken cook it skin side down, sprinkle olive oil, rosemary, and a little oregano on top of the chicken...she would cover the chicken with a pizza pan lol..then put a heavy rock on top so the chicken cooks nice and crunchy....then when it was almost done to perfect she would squeeze lemon over the hot pan...omg..to die for. this goes great with risotto btw

My dad is in the hospital so I may not be able to do any cooking this weekend.....but I will try to get one of your recipes in. They all sound so good (I have copies of all) but I am not sure which one I will try first. My SO, actually does the cooking in our house, maybe I can ask him to whip one of them up. He actually hates clean up...so that is why he cooks. No problem with me, win - win as far as I am concerned.

IG..my dad is 80 and had cancer taken out of his stomach..the healing will take long for him and he is in a lot of pain. It just kills me to see him like this!! Thank you!!!!
I can't wait to get on some of these recipes.....they all make my mouth water.
Have a nice day!!!!! I am so so sorry Kat. I hope they are keeping your dad comfortable!! I'll keep your father in my prayers hon...again, I'm sorry to hear this.
