Tonight we're having Spicy Whiskey BBQ sliders. SOOOOOOOOOOOOOOOOOOOOO good!
Ingredients
2 pounds Ground Meat (beef, Bison, Turkey) Salt And Pepper 4 Tablespoons Butter 1 whole Large Onion, Diced 1/2 cup Whiskey 1 cup Barbecue Sauce 1/4 cup Jarred Jalapeno Slices (more To Taste) I used fresh jalapenos instead 12 whole Slider Buns Or Dinner Rolls, Split
Preparation Instructions
Form the meat into 12 (or so) miniature patties and salt and pepper them on both sides. Melt the butter in a skillet over medium-high heat and cook the patties until just about done in the middle, approximately 3-4 minutes per side. Remove the patties from the skillet and set aside. Drain off all but 2 tablespoons of grease, then return the skillet to the stove.
Throw the diced onions in the skillet and stir to cook, about 3 minutes. Pour in whiskey (be careful if you're cooking over an open flame; turn it off momentarily to be extra careful) and stir. Allow the whiskey to reduce by half, about 2 to 3 minutes, then stir in jalapenos and the barbecue sauce.
Reduce the heat to low and place the patties in the barbecue sauce, turning to coat. Allow the patties to simmer in the sauce until everything's hot and bubbly.
Place the patties on individual buns and be sure to spoon extra sauce (with the jalapenos!) over the top of each one before topping with the other half of the bun.

This is what I had for sup last nite, it was so good had to share
Chicken and Potatoe Bake
2 Tablespoons olive oil 1 Tablespoon paprika 1/4 teaspoon chopped rosemary 1 teaspoon salt pepper to taste 1/2 teaspoon garlic powder 6 chicken thighs 3 to 4 medium red potatoes
In a bowl mix the olive oil, paprika, rosemary, salt, pepper, and garlic powder add the potatoes and chicken and toss till all coated with oil mixture
in a baking dish, line with foil paper and oil with olive oil add the potatoes and cook for 15 minutes push the potatoes to one side and add chicken cook for an additional 40 to 45 minutes or until potatoes are golden brown and soft.
ENJOY!!

The following recipe is EASY and takes 5-10 minutes to prepare and is fork tender when done. Don't forget to cover it in the oven. No need to brown the meat ahead of time either. Round Steak Supreme (Swiss Steak) 2 lbs round steak, trim off fat 1 can golden mushroom soup ½ soup can of water 1 pkg. dry onion soup mix 1/2 soup can of burgundy/red wine *Put above mixture in casserole over meat (do not brown meat). Cover with foil. Bake at 325 degrees for 3 hours. Serve with rice or potatoes and a vegetable. Double the sauce if using more meat.

Spicy Chipolte Beef.... YUMMMY!
Ingredients
2 Tablespoons Canola Oil 2 Tablespoons Butter 3 pounds Stew Meat Or Diced Chuck Roast 1 can (11 Ounces) Chipotle Peppers In Adobo Sauce 4 cups Low-sodium Beef Broth, More If Needed 5 cloves Minced Garlic 1 Tablespoon Cumin 2 teaspoons Chili Powder 1 whole Onion, Diced 1 whole Red Bell Pepper 3 whole Chilies (any Variety, Hot Or Mild)
to make the meat, heat 1 tablespoon oil and 1 tablespoon butter in a large pot over high heat. Throw in stew meat and brown for 1 minute, then add chipotle peppers, beef broth, garlic, cumin, and chili powder. Stir, then bring to a boil. Reduce the heat to low, then cover and simmer for 2 1/2 to 3 hours, or until the meat is fall-apart tender and the liquid is thick. (Watch the meat occasionally and add more beef broth as needed.)

Tonights dinner
Sweet & spicy pork chops w/ pineapple fried rice
Ingredients
1/2 whole Pineapple, Cut Into Spears And Skewered 2 cups White Or Brown Rice, Cooked 6 whole Pork Chops 1 Tablespoon Butter 1 Tablespoon Peanut Oil Or Canola Oil 1 whole Large Onion, Sliced 6 Tablespoons Soy Sauce (more To Taste, Or If More Liquid Is Needed) 1 Tablespoon Rice Wine Vinegar 2 Tablespoons Honey 1 Tablespoon Sriracha, Or Other Hot Sauce Salt To Taste 3 cloves Minced Garlic 2 whole Eggs 1 jar (small) Drained Pimentos 1-1/2 cup Frozen Peas 2 Tablespoons Soy Sauce (additional)
Preparation Instructions
Cook rice according to package instructions. Set aside.
Grill or saute pineapple spears until they have good marks/color on the outside. Slice, then set aside.
(Note: soak wooden skewers in water for a few hours first.)
Heat butter and oil over medium high heat, then add the pork chops to the pan. Saute on both sides until they have nice color.
Throw in the sliced onions and work them into the crevices between the chops. Shake the pan and move the onions around and let them cook for a good couple of minutes.
When the onions are starting to soften, add soy sauce, rice wine vinegar, honey, and hot sauce. Shake the pan, stir it around, and let it cook and bubble up for a good couple of minutes until the pork chops are completely cooked and the sauce is thicker. Remove the pork chops to a bowl, then let the sauce bubble up and cook for another 30 to 45 seconds. Pour it over the pork chops. Set aside.
Add a small amount of oil to the same pan (without cleaning it) and return it to the stovetop over medium-high heat. Add garlic and stir it around, then crack in the eggs and immediately stir them to scramble them a bit. Add peas, pimentos, and a couple of tablespoons (additional) soy sauce. Add cooked rice and stir it around to cook for a couple of minutes.
To serve, pile rice on a plate, then top with a pork chops and onions from the sauce. Drizzle a little bit of sauce over the top.

Hi IG, I think I may give the Gnocchi a try this weekend .. dad is still in the hospital but doing very very well, so I may stay home and give this recipe a try. I had an aunt who made them and they were awesome home made!!!

SPICY STUFFED MUSHROOMS 1- 8 oz carton button mushrooms 1 package cream cheese softened. Fat-free or lowfat works very well, also. Approx. 1/3 -1/4 cup crushed Frenches fried onions, or Italian style breadcrumbs Garlic powder (to taste) Onion powder (to taste) 1/4 tsp. cayenne pepper 1/8 tsp horse radish powder (optional) Preheat oven to 350 Clean and remove mushroom stems..(chop stems and put aside) Create an opening in the mushrooms by slicing around inside mushroom, being careful not to cut to thin or through mushroom caps! Chop and add to chopped mushroom stems. Saute chopped mushroom stems, cooking until juices have dissipated. Set aside to cool. Mix cream cheese, crushed fried onions--or bread crumbs, spices, and cooled mushroom stems until mixed well. Mixture should be thick. Stuff mushrooms. Place mushrooms on cookie sheet and cook 20 minutes or until desired . These are really good! If you like spicy food. If not, decrease...or even eliminate --the cayenne pepper. Although, I could not see making mine that way! Forgot to add parmesean cheese! Add about 1/4 cup cheese to cream cheese mixture. If mixture is too thick, add small amounts of sour cream or unflavored yogurt until it reaches desired consistancy.
