Recipes....................o o o ...k.here goes; East European Swan Delight:
1/-First, catch your swan (yes- i said SWAN).......give the old Gregory a twist to quieten it down, then leave it hanging up for 3 weeks to improve the flavour. 2/-Remove all the squidgy inside bits and bobs,and give em to the dog or cat........... 3/-Stuff from both ends with cabbage and beetroot,and cook over a bonfire for about 10 minutes,or so...................(no longer, as not having had brekkie, you'll be hungry). 4/-Serve on last weeks T-shirt,which both saves washing up and warms the T-shirt for later use...

Perfect tattie scones. (Makes 24 triangles) 500g floury potatoes, unpeeled 50g butter 125g plain flour, plus extra to dust Put the potatoes in a pan, cover with water, salt generously and bring to the boil. Simmer until cooked through, then drain well and return to the hot pan for a minute to dry off. Peel off the skins as soon as you can handle them. Add 40g butter and mash, then stir in the flour and season to taste. Roll out the dough on a lightly floured surface to about 5mm thick, then cut around a side plate to shape. Dust lightly with flour and all over with a fork. Heat the remaining butter in a griddle or large heavy based frying pan over a medium-high heat and then fry until golden on both sides (about 3-5 minutes). Cut into triangles and serve immediately, or cool in a tea towel for later. Sorry folks the censored word is P, R, I, C, K.

I tried a new recipe tonight . . . Parmesan Crusted Chicken (mmmmmmmmmmm good)
Use chicken thighs (or breasts)
Marinate in McCormick Scampi Sauce along with a 1/4 cup maple syrup for a few hours (or overnight). (Recipe called for butter and garlic cloves, I used the scampi instead.)
Bread crumbs (it calls for Panko but I just used regular 4C brand) Parmesan Cheese about 1/3 cup or to taste (it calls for shredded but I used grated) Blend the bread crumbs and parmesan It also calls for salt and pepper, which I did't use.
Take the marinated pieces and cover in the crumb mixture and place in baking pan. Sprinkle any left over ingredients in the pan. Place in 400 degree oven and bake for about 40 to 50 minutes or until juices run clear when poked.
That's it. Sooooooooooo good!

Lamb
The recipe I have called for a garlic and rosemary rub but I didn't use the rosemary. I rubbed them with a little Vermont maple syrup and put dried garlic flakes on that. Put them in a freezer bag in the fridge for a few hours. We broiled them and I made an orange sauce reduction using 1/2 cup orange liqueur (Grand Marnier or Grand Gala), 1/4 cup beef broth, a couple drops of mint extract (cuz I don't have fresh mint) until it was reduced by about half, then added two tablespoons of butter. The sauce will thicken on it's own with the butter as it cools. When the chops were done, we drizzled the sauce on them.
OMG was that ever good! I will be making that again! I also think the sauce would be great on ham or maybe even chicken on the grill.

I made this last night to have for breakfast this morning! So good! I used a cup of oatmeal, a cup of low fat milk, one mashed ripe banana, and a good spoonful of creamy peanut butter. Must use rolled oats! Just make sure liquid to oats measurement is equivalent. Mine made two good portions/servings.
Overnight Oats The mixture will keep for up to two days — if you don’t add the banana, up to four days. However, once you are experienced, you’ll have no problem whipping up another batch midweek if needed!
Yield: 1 serving Prep Time: 2 minutes Active Time: 2 minutes Total Time: Refrigerate overnight or at least 5 hours
Ingredients:
1/3 to ½ cup rolled oats 1/3 to ½ cup liquid of choice 1/3 to ½ cup yogurt (optional) ½ banana, mashed (optional) 1 teaspoon chia seeds (optional but highly recommended) Toppings of choice added next morning.
Method:
1. Add the desired base ingredients to a jar or other container and give them a good stir. Refrigerate overnight or for at least 5 hours.
2. In the morning, add additional liquid if you’d like. Once you achieve the desired consistency, add any toppings that you have on hand.
